Green plantain chips with mojo dipping sauce

MOJO SAUCE

Serve with tostones or use it as a marinade and dip for oven-roasted chicken wings.


Makes about 1 cup


INGREDIENTS

 

  • 1 cup firmly packed fresh cilantro 
  • ¼ cup olive oil 
  • ¼ cup fresh orange juice 
  • 3 tablespoons fresh lime juice 
  • 1 serrano chile, stemmed and chopped (see Note) 
  • 1 garlic clove, quartered 
  • 1 teaspoon granulated sugar 
  • ½ teaspoon kosher salt


METHOD


In the bowl of a small food processor, combine the cilantro, olive oil, orange juice, lime juice, chile, garlic, sugar, and salt and blend until smooth, about 45 seconds. 


Transfer the sauce to a small bowl to serve. 


NOTE


  •  Too spicy? Remove the seeds and pith from the chile.
